These are #strawberry and #blueberry #glutenfree #muffins.
18 days of #breakfast with #yoghurt muffins (minus one I just had for #afternoontea ) 😁
Recipe:
In a mixing bowl add;
2 cups - gluten free SR flour
2 tablespoons - gluten free custard powder
1 cup - coconut sugar
Mix into dry ingredients;
2 eggs
3/4 cup - rice bran oil
3/4 cup - milk
Fold in 1 & 1/2 cups frozen strawberries and 1 cup frozen blueberries (can use fresh too).
In greased muffin tins, bake at 180C for 25 minutes.
Best eaten when hot (so I microwave for 40 seconds in the morning before adding the yoghurt)!

I've had a busy day; I took my 15yr old son to the orthodontist after dropping my 17yr old son to school first, got passport photos done at the post office for 15yr old, then took him to school, went to another country post office to have the passport forms submitted, but unfortunately now have to go to a metro one tomorrow instead 😭
Got home with time to quickly throw a #pizzadough mix into my #breadmachine and then have it refrigerated.
Quickly ate some leftovers for lunch, then went and helped a friend organise her laundry and kitchen after she moved house, followed by school pickup.
I've made two pizzas for dinner and have another #gf one cooling on the stove (before I share in another post) for myself.

Now I'm driving the 17yr old to cricket 🏏 training .

Wondering why I've been MIA for a while?
Well I've been adjusting back to my old life of being a full time parent again, with hubby returning to a FIFO (fly in, fly out) work life. I'm only at week 2 (which already feels like week 4) of a 6 WEEKS ON & 2 WEEKS OFF period.
Today I managed to bake (and photograph) 😁 - a #coffeebuttercake and #zucchini #chocchip #muffins
They smell amazing, however I can't taste test as they are not gluten free 😭 #formykids #afternoontea #schoollunches

It was a #crockpot #slowcooker day today.
This was so easy to make - #zucchini #leek #onion #garlic #potato #bake .
In the jug, I mixed #greekyoghurt #sourcream #parmesancheese and #paparika and freshly chopped #corriander - in a frying pan I caramelised the onions and garlic along with the zucchini. Par baked the potatoes (with more garlic and herbs) and just mixed everything into the pot.
Before serving, I added some grated tasty cheese, salt and pepper. And served it along side this evening's dinner. (A baked butterfly chicken, steamed broccoli and pumpkin).
